Korean/Russian Carrot Salad

So today I looked in my refrigerator and the only option as far as veggies go was a fuckload of carrots.

So, I made a tasty carrot salad. Apparently this is popular in Russia, but confusingly, is of Korean origin. This is what you’ll need.

  • Some carrots
  • Sliced almonds (optional)
  • A couple tablespoons of vinegar and/or lemon juice
  • Salt
  • Pepper
  • Some cayenne pepper
  • Coriander

Grate the carrots. Combine everything else and mix it in. I like toasting whole coriander seeds and grinding them myself, but I’m a foodie faggot, YMMV. Let it sit for at least an hour, preferably overnight.
